Restaurateur Max Chodrow to bring Jean's bistro to the Hamptons

New York’s hip Jean’s restaurant is moving out East, taking over the Old Stove Pub in Sagaponack. Chodrow says it won’t be a seasonal pop-up and that he wants to build something for the community: “We don’t really love the Montauk process of doing things, where you run something temporary.

We want to build something for the community and to be there for a really long time.” He added, “We’re in it for long term and plan to be open year-round.” Chodrow opened Jean’s in the old Butter space on Lafayette in Noho in 2023. The spot doubles as a restaurant and nightclub and has drawn stars including Busta Rhymes, Bad Bunny, Parker Posey, Erykah Badu, Amanda Lepore and Dianne Brill.

It has hosted an “SNL” afterparty or two, though Chodrow said the Sagaponack outpost will not mirror the city’s party energy.
