Mother’s Day recipes: three treats to make for your mum
An unbidden cup of tea is a simple way to say “I love you”, but for Mother’s Day a few indulgent snacks feel even more special. Rather than fussy finger sandwiches, choose a fortifying savoury roll, a slab of old‑fashioned cake and buttery biscuits that crumble into a million sweet crumbs.
This lemon and elderflower drizzle cake is very simple to make and looks more dramatic in a bundt tin. Cream butter and sugar, whisk in the eggs and a little elderflower cordial, fold in flour, lemon zest and milk, then bake at 180C (160C fan) for about 35–40 minutes.
Cool, then drizzle with an icing made from lemon juice, elderflower cordial and icing sugar, or serve with a dollop of crème fraîche and berries instead. The lime and passion fruit curd yo‑yos balance tart curd with sweet biscuits. Cream butter, icing sugar, salt and lime zest, add plain flour, cornflour and lime juice, roll into tablespoon-sized balls, flatten with a fork and bake at 160C (140C fan) for 15–18 minutes.
