You can change mouse sensitivity in Resident Evil Requiem
Resident Evil Requiem nudges players to experience Grace's sections in first-person and Leon's in an over-the-shoulder view, a contrast meant to heighten the former's scariness and the latter's bravado. I played through the opening with my mouse feeling like molasses because I assumed there wasn't a way to change the sensitivity.
Capcom clarified post-release that mouse sensitivity is adjustable per character via Camera in the Options menu. Select Grace's Camera or Leon's Camera, and a menu with more detailed settings opens; from there you can adjust the camera speed for first-person and third-person perspectives.
There is no FOV slider, though the Resident Evil 4 remake included one, and the resolution options are fairly basic — my 2560x1600 monitor isn't supported. There's always REFramework, I guess.
