Cook John Gregory-Smith has shared three chicken traybake recipes that draw on eastern Mediterranean, Persian and Korean flavours.

The trio includes eastern Mediterranean chicken meatballs flecked with feta and black olives and baked in a rich tomato passata; a Persian-style saffron chicken and rice where the rice cooks with the chicken, absorbs saffron and crisps at the edges; and a Korean-inspired chicken and potato traybake in which gochujang and soy create a deeply savoury sauce.
