Rex Linn’s armadillo eggs appear in Happy’s Place Season 2

Nbc reported that Rex Linn’s real-life affinity for cooking appears in Season 2, Episode 7 ("An Accountant Prepares") of Happy's Place, when Emmett brings a new appetizer — armadillo eggs — to the tavern.

On screen, co-owner Isabella (Belissa Escobedo) volunteers to taste the dish, prompting concern from head chef Emmett and colleague Gabby (Melissa Peterman). Isabella initially calls the armadillo eggs — described in the episode as grilled cheese–stuffed jalapeños wrapped in meat — bland; after a candid kitchen conversation Emmett tweaks the recipe and Isabella praises the improved version.

In a December 2025 interview, Linn said armadillo eggs are "a Texas thing," noting they are stuffed jalapeños with sausage and bacon and that he used to make them often; the appetizer was cooked and eaten on set. He added that the show is exploring more new dishes in upcoming episodes and said he was excited about that development.
