Kaddu ki kheer
Ingredients:
Pumpkin 2
Water 1 and 1/2 Cup
Ghee 2 tbsp
Coconut chopped 4 tbsp
Almonds peeled and sliced 2-3 tbsp
Raisins 2-3 tbsp
Cardamom 3
Milk 1+1/2 litre
Sugar) 1/2 Cup or to taste
Green food color
Method of Preparation:
✓ Peel and Cut Pumpkin into pieces and set aside.
✓ Peel 1 medium Pumpkin grate with the help of the grater.
✓ In pan add pumpkin cubes, water and boil for 10-15 minutes or until soft.
✓ Then add green food color blend with the help of the blender.
✓ In pot add ghee and let it melt.
✓ Add dry fruits and fry for 1 minute.
In same pan add grated Pumpkin, mix well and cook for 5-6 minutes & keep mixing in between.
✓ Now add blended pumpkin, cardamom and mix well.
✓ Add milk, mix well and bring it boil and cook for 20-25 minutes.
✓ Add sugar,Dry fruits mix well and cook until on low flame for 5-7 minutes.
✓ Garnish with Almonds.
