Awesome cheese and potato flatbreads. You need some crushed feta cheese, grated cheddar and some boiled potatoes mashed with some milk. Add some black pepper to taste. Open your dough to 30cm disks and place some potato and the cheese mix in the middle. Fold over and flatten with your rolling pin. Place some veg oil in a hot pan and shallow fry till golden brown and puffed on both sides, turning frequently.
For the dough: 1) Add 500gr of flour in a bowl
2) Activate some dry bread yeast with 2 teaspoons of sugar till it turns liquid
3) Add 1/2 cup of water, 1/3 cup of olive oil, 1 teaspoon of salt and the yeast to the flour
4) Knead by hand for about 10’ and add another 2/3 cup of water (adjust as necessary) till you have a bouncy dough
5) Set the dough aside to rise till double in size (for at least an hour)
