INGREDIENTS: Crispy pork: - 1kg pork belly (sliced lengthwise) - 2 tbsp Knorr liquid seasoning - onion, garlic, bay leaves, peppercorns, salt Homemade atchara: - 1 green papaya, shredded - 1 small carrot, julienned - 1 onion, sliced - 2 green chillies, sliced - bay leaves/peppercorn - 1/4 cup raisins - solution of equal parts vinegar and water with 2/3 cup sugar, 1 tsp turmeric and 1 tbsp salt Other ingredients: - Garlic fried rice with Knorr seasoning - Sunny Side up egg INSTRUCTIONS: - Make crispy pork belly by boiling pork belly with onion, garlic, bayleaves, peppercorn, Knorr Liquid seasoning and salt for around 20-30mins. Rub with salt and let dry overnight in fridge. - Air fry pork at around 175C for 40mins-1hr or until the skin is slightly hard but still has some resistance when you touch the skin. Remove and let cool. - In a pot with really oil >180C drop your pork belly pieces and cook for 3-5mins or until the skin is bubbly and crispy. Chop pork belly into cubes and set aside. - Make atchara by combining all the ingredients listed above along with your pickling solution. Leave in fridge overnight - Serve crispy pork bits with garlic rice, egg, atchara and enjoy!
