Palak Paneer (Spinach and cheese curry)
Ingredients:
- 1 block paneer, cubed
- 2 tbsp ghee (clarified butter)
- 2 tsp cumin seeds
- 4 dried chili (optional)
- 2 inch ginger, finely minced
- 8 cloves garlic, finely minced
- 1 onion, chopped
- 1/2 kg spinach leaves, blanched
- 1 bunch cilantro/coriander
- ~1/2 cup tomatoes
- 1 tbsp garam masala
- 1 tbsp dried fenugreek
- Salt to taste
Instructions:
- Deep fry your paneer cubes until slightly browned. drain on paper towel and set aside.
- Blend your blanched spinach leaves along with tomatoes and coriander. Add water as needed. Reserve and set aside.
- In a pan, heat up ghee and toast your cumin seeds and dried chili. Add in your ginger and garlic and toast until fragrant.
- Add in your onion and cook for around 2-3mins along with your reserved spinach paste.
- Add in garam masala, fenugreek leaves and salt to taste. You may stir in cream at this point if you want.
- Serve with cream on top along with some warm naan and enjoy!
