Mapo Tofu Rice bowl (Japanese Style)
Ingredients used:
- 1 block soft tofu, cubed
- 1/2 kg ground pork
- 8 cloves garlic, minced
- 2 stalks onion leeks, chopped
- 2 inch ginger, minced
- 1 tbsp tian mian jiang (sweet soy bean paste)
- 1 tbsp toban jan (chili bean paste)
- 1/8 cup soy sauce
- 1/4 cup mirin
- 1/4 cup dashi
- 8 stalks garlic scapes, chopped
- 1/4 cup sugar
- water as needed
- cornstarch slurry
Instructions:
- Brown ground pork until oil is released. add in leeks, garlic and ginger. saute until fragrant and add in chili bean paste and sweet bean paste. Cook for around 1-2mins
- Add in drained tofu followed by your garlic scapes, mirin, soy sauce, sugar and dashi. Stir gently to combine and add around 2 cups water.
- Thicken the sauce using cornstarch slurry and cook for an additional 3 mins.
