Taiwanese Fried Squid w/ Sweet Chili Sauce
Ingredients:
Squid/Marinade:
- 1 kg squid (cleaned)
- 1 tbsp soy sauce
- 1 tsp sugar
- 1 tsp salt
- 1 tbsp five spice powder
- 1 tbsp white pepper
- 4 cloves garlic (grated)
- 1 tbsp shaoxing cooking wine or mirin
- 1/4 cup sweet potato flour/rice flour
- Sweet potato flour (for breading)
Finishing:
- Basil
- Bird's eye chili
- Mix of (1tsp five spice powder, 1 tsp salt, 1 tsp white pepper and 1/2 tsp sugar)
- Chili powder (optional)
Sweet chili sauce:
- 1/2 cup sugar
- 1/4 cup rice vinegar
- 6 birds eye chili,
- 4 tbsp fish sauce
- 1/4 cup red pepper flakes
- 8 garlic cloves
INSTRUCTIONS:
- Combine squid, soy sauce, sugar, salt, five spice powder, white pepper, garlic, mirin, rice flour/sweet potato flour. Mix and let marinate for at least two hours.
- To make sweet chili sauce, chop garlic and chili w food processor (u can also do it by hand) add into saucepan with vinegar, fish sauce, water and sugar. bring to a simmer and add in cornstarch slurry to thicken.
- Dredge marinated squid in sweet potato flour and fry at 165C until golden brown.
- Fry Basil leaves until it turns into a dark green color. Set aside.
- Combine fried squid, fried basil leaves, chili and five spice mix. Toss until squid is well-coated.
- Serve fried squid and enjoy ā¤ļø
