Ingredients for 18-20 pcs.: Flour - +/-400 g Salt - 1/2 tsp. Sour cream - 150 g Baking powder - 1 tsp. Butter - 180 g Egg yolk - 1 pc. Filling: Chopped nuts (I used walnuts) - 100 g Egg white - 2 pcs. Salt - 1/4 tsp. Sugar - 160 g Vanilla sugar - 1 tsp. For lubrication: egg yolk - 1 pc. For sprinkling: sesame seeds or nuts Prepare shortbread dough. 1 Sift flour into a bowl, add baking powder, salt, mix with a whisk. Grate cold butter into the flour on a coarse grater. 2 Then use your hands to grind everything into uneven crumbs. 3 In another bowl, mix sour cream and egg. 4 Combine the sour cream mixture and flour crumbs and knead into a soft dough. 5 Divide the dough into two equal parts, wrap in film and place in the refrigerator for about 1 hour. Let's prepare the filling. 6 Any nuts will work for these cookies. Dry the nuts and grind them in a blender, not very finely, so that there are large pieces in the crumbs. 7 Beat the whites and a pinch of salt with a mixer at low speed until light foam. Add vanilla sugar, and, continuing to beat at high speed, add sugar in parts. Beat until stiff peaks form, about 7-10 minutes. 8 Roll each part of the dough into a thin layer (rectangle), approximately 2-3 ml thick. Grease the dough with protein mixture and sprinkle with nuts (visually divide the protein mixture and nuts in half), leave the far edge 1.5-2 cm, do not grease it. 9 Roll the dough into a roll. Cut the roll into equal parts of 3 cm (about 12-14 pieces). 10 Line the pan with parchment paper or a baking mat and arrange the cookies so that there is space between them. Brush with yolk, sprinkle sesame seeds or nuts on top. Bake in a preheated oven at 190 degrees until golden brown, about 25 minutes. Place the finished cookies on a wire rack and let cool. 11 The cookies are ready! Bon appetit!
