Mussels with Chorizo and Fennel
Ingredients
2lbs Mussels
6oz Spanish Chorizo thinly sliced
4 cloves garlic
1 shallot sliced
2 fennel bulbs sliced
1/4 cup parsley chopped
1 pint cherry tomatoes sliced
1 can whole baby tomatoes /or crushed tomatoes
1 C dry white wine
1 tsp red pepper flakes
Salt and pepper to taste
Olive oil (~1-2 tbsp)
