Pasta Salad with Feta Cheese and Watermelon

Ingredients: 12 ozs macaroni salt 1 table spoon pine nuts 1red onion 1 pc watermelon (peeled) 2 stalks mint 4 table spoons feta 2 table spoons lemon juice 4 table spoons olive oil freshly ground peppers Preparation steps 1. Cook pasta in boiling salted water a dente, drain, rinse with cold water and drain again. 2. Toast pine nuts in a dry pan until golden yellow, remove from heat, cool and chop coarsely. Peel onion, halve and cut into narrow strips. Seed watermelon and cut pulp into bite-sized pieces. Rinse mint, shake dry and pluck off leaves. 3. Cut the feta cheese into 1/2" cubes. 4. Prepare dressing by combining lemon juice with oil, season with salt and pepper. 5. Combine salad ingredients, toss with dressing. Arange on plates, season with salt and pepper to taste and serve.
