Oxtail Plantain Tacos
I had 4 pounds of oxtail and I used about
Green Seasoning
4 Tablespoons of Oxtail Seasoning
3 Tablespoons of Garlic Powder
3 Tablespoons of Onion Powder
1 Tablespoon of Smoked Paprika
Like I said, I had 4 pounds so it's best to adjust, if needed.
I sear my oxtail in a skillet, to lock in flavor. I add water to the same bowl I seasoned the oxtail in, and add it in pot. Since we are making it in the oven, get all of the flavoroff the bottom of the pot you seared the oxtail in; and place it in the pot your going to cook the oxtail in (if necessary) It should be almost covering the oxtail Add pimento seeds, bay leaves, and 1 scotch bonnet pepper.. 6 thyme stems
Cover and let it cook for about 2/3 hours.. stir occasionally & ADJUST THE SEASONINGS IF NEEDED
Once falling off the bone add ketchup, stir, and cook for about 10-15 minutes MORE
2 Large Plantains BOILED+ MASHED (GREEN ONES)
2 Tablespoons of Garlic Butter
Salt To Taste
1 Cup of The Water you boiled the plantain in (use gradually)
1 Half Cup of FLOUR
1 Half Cup of Cornstarch
You should have a dough like consistency at this point if you DONT. Add more cornstarch and water until you get that. Roll into balls, and flatten out. Fry on Both Sides until golden brown, place in a taco holder to shape it. For the cheese to melt you need an OVEN safe taco Holder #daronthechef #foodie #oxtail
