1 cup bulgur wheat 2 cups fresh parsley, finely chopped 1/2 cup fresh mint leaves, finely chopped 4 tomatoes, diced 1/2 cup green onions, finely chopped 1/4 cup fresh lemon juice 1/4 cup extra virgin olive oil Salt and pepper to taste Instructions: Place bulgur wheat in a bowl and cover it with boiling water. Let it sit for about 20-30 minutes or until it's tender. Drain any excess water and let it cool. In a large bowl, combine the chopped parsley, mint, tomatoes, and green onions. Add the cooled bulgur wheat to the bowl. In a separate small bowl, whisk together lemon juice, olive oil, salt, and pepper. Pour the dressing over the salad and toss until well combined. Taste and adjust seasoning if necessary. Refrigerate for at least 30 minutes before serving to allow the flavors to meld together. Fattoush Salad: Ingredients: 2 large tomatoes, diced 1 cucumber, diced 1 green bell pepper, diced 1 red onion, thinly sliced 1 cup fresh parsley, chopped 1/2 cup fresh mint leaves, chopped 1 cup romaine lettuce, torn into bite-sized pieces 1 cup radishes, thinly sliced 1 cup pita bread, toasted and broken into small pieces 1/4 cup extra virgin olive oil 2 tablespoons fresh lemon juice 2 cloves garlic, minced 1 teaspoon sumac Salt and pepper to taste Instructions: In a large bowl, combine tomatoes, cucumber, bell pepper, red onion, parsley, mint, romaine lettuce, and radishes. In a small bowl, whisk together olive oil, lemon juice, minced garlic, sumac, salt, and pepper to make the dressing. Pour the dressing over the salad and toss until all the ingredients are well coated. Add the toasted pita bread pieces to the salad and toss gently. Taste and adjust seasoning if needed. Allow the salad to sit for about 10-15 minutes before serving to allow the flavors to meld together and the pita bread to soften slightly. Both Tabbouleh and Fattoush salads are best served chilled.
