A delightful Ramadan tradition: crafting authentic Egyptian khashaf from scratch
Khashaf is a traditional Egyptian drink that is typically served during Ramadan to break the fast. It's a refreshing beverage made with fruits, nuts, and aromatic herbs. Here's a basic recipe for making Egyptian khashaf:
Ingredients:
- 1 cup dried apricots
- 1 cup dried figs
- 1 cup raisins
- 1 cup dried dates
- 1 cup dried prunes
- 1 cup dried cranberries (optional)
- 1/2 cup blanched almonds
- 1/2 cup walnuts
- 1/4 cup pine nuts
- 1/4 cup shredded coconut
- 1 cinnamon stick
- 4-5 cloves
- 1 teaspoon fennel seeds
- 1 teaspoon coriander seeds
- 1 teaspoon whole black peppercorns
- 1/2 cup sugar (adjust according to taste)
- 8-10 cups water (adjust based on desired consistency)
- Ice cubes for serving
Instructions:
1. Rinse all the dried fruits under cold water to remove any dust or debris. Then, chop them into small pieces and set aside.
2. In a large pot, add the chopped dried fruits, blanched almonds, walnuts, pine nuts, shredded coconut, cinnamon stick, cloves, fennel seeds, coriander seeds, and black peppercorns.
3. Pour in the water and bring the mixture to a boil over medium-high heat.
4. Once it starts boiling, reduce the heat to low and let it simmer uncovered for about 30-40 minutes. Stir occasionally.
5. Add the sugar to the pot and stir until it dissolves completely. You can adjust the amount of sugar based on your preference for sweetness.
6. Turn off the heat and let the khashaf cool down to room temperature.
7. Once cooled, strain the khashaf through a fine-mesh sieve or cheesecloth into a large pitcher to remove the solids. Press down on the solids to extract as much liquid as possible.
8. Discard the solids, and refrigerate the strained khashaf until chilled.
9. To serve, fill glasses with ice cubes and pour the chilled khashaf over the ice.
10. Garnish with a few whole almonds, walnuts, or a sprinkle of ground cinnamon if desired.
11. Stir the khashaf before drinking to mix any settled ingredients.
