Hariyali kofta, also known as Hara bhara kofta, is a popular Indian dish made with spinach and other green vegetables. Here's a recipe to make Hariyali kofta in the Indian way:
Ingredients:
For Koftas:
- 2 cups chopped spinach (palak)
- 1/2 cup grated paneer (Indian cottage cheese)
- 1/4 cup boiled and mashed potatoes
- 2 tablespoons besan (gram flour)
- 1 green chili, finely chopped
- 1 teaspoon ginger-garlic paste
- Salt to taste
- Oil for deep frying
For Gravy:
- 2 onions, chopped
- 2 tomatoes, chopped
- 1/2 inch piece of ginger, chopped
- 4-5 garlic cloves, chopped
- 1/2 cup fresh cream
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala
- Salt to taste
- Oil or ghee for cooking
Instructions:
Making Koftas:
1. Blanch the spinach in water for 2 minutes. Drain, rinse with cold water, and squeeze out excess water. Chop the blanched spinach finely.
2. In a mixing bowl, combine the chopped spinach, grated paneer, mashed potatoes, besan, green chili, ginger-garlic paste, and salt. Mix well to form a dough-like mixture.
3. Divide the mixture into small portions and shape them into round koftas.
4. Heat oil in a pan for deep frying. Once the oil is , fry the koftas until golden brown and crispy. Remove and drain on paper towels to remove excess oil. Keep aside.
Making Gravy:
1. Heat 2 tablespoons of oil or ghee in a pan. Add cumin seeds and let them splutter.
2. Add chopped onions, ginger, and garlic. Saute until the onions turn golden brown.
3. Add chopped tomatoes and cook until they are soft and mushy.
4. Turn off the heat and let the mixture cool down a bit. Then, blend it into a smooth paste using a blender or mixer.
5. Heat the same pan again, add a little oil if needed, and pour the blended tomato-onion paste into it.
6. Add turmeric powder, red chili powder, coriander powder, garam masala, and salt. Mix well and cook the masala until the oil separates from the sides.
7. Add fresh cream to the masala and mix until well combined.
8. Pour in some water to adjust the consistency of the gravy. Let it simmer for a few minutes.
#### Assembling:
1. Just before serving, gently place the fried koftas into the simmering gravy.
2. Let the koftas simmer in the gravy for 2-3 minutes, allowing them to absorb the flavors.
3. Garnish with fresh cream and chopped coriander leaves.
4. Serve with naan, roti, or rice.
