Enjoy a satisfying iftar dinner spread featuring fajita chicken, Mexican rice, stir-fried vegetables, and Mexican corn salad, all prepared with love in the comfort of your home. #Mamaskitchen977 #happycookingtoyou #ramadanrecipes Youtube: https://youtu.be/wg3Tv8s5Ib8?si=xpLRLIsK_hrOPKIp Recipe in English: Ingredients: Prepare Fajita Seasoning: -Lal mirch powder (Red chilli powder) 2 tbs or to taste -Onion powder 1 tbs -Zeera powder (Cumin powder) 1 tbs -Sugar powdered 1 tsp -Cayenne chilli pepper ½ tbs -Himalayan pink salt 2 tsp or to taste -Paprika powder 2 tbs -Lehsan powder (Garlic powder) 1 & 1½ tbs -Dried oregano 1½ tbs Prepare Fajita Chicken: -Boneless chicken fillets 500g -Fajita seasoning ½ tbs -Lemon juice 1-2 tbs -Cooking oil 1-2 tbs Prepare Mexican Corn Salad: -Cream ³¼ Cup -Lemon juice 2 tbs -Corn kernels boiled 2 Cups -Pyaz (Onion) chopped 1½ Cup -Hari mirch (Green chilli) chopped 1-2 -Lehsan (Garlic) finely chopped 2 cloves -Fajita seasoning 1 tsp -Hara dhania (Fresh coriander) chopped handful -Himalayan pink salt to taste Prepare Stir Fried Vegetables: -Cooking oil 1 tbs -Pyaz (Onion) sliced 1 Cup -Shimla mirch (Capsicum) julienne 1 Cup -Yellow bell pepper julienne 1 Cup -Tamatar (Tomato) deseeded & julienne 1 Cup -Fajita seasoning to taste Prepare Mexican Rice: -Cooking oil 2-3 tbs -Lehsan (Garlic) chopped 1 tsp -Water 2-3 tbs -Tomato paste 2 tbs -Chicken powder ½ tbs -Fajita seasoning 1 tbs -Chawal (Rice) boiled 2 Cups Directions: Prepare Fajita Seasoning: -In jar,add red chilli powder, onion powder, cumin powder, sugar, cayenne chilli pepper,pink salt, paprika powder, garlic powder, dried oregano & shake well.Fajita seasoning is ready! Prepare Fajita Chicken: -Cut chicken fillets from centre & use needle tenderizer or meat mallet. -Add fajita seasoning, lemon juice, rub evenly & marinate for 30 minutes. -On cast iron pan, add cooking oil & grill marinated chicken from both sides until done (4-5 minutes each side). -Let it rest for few times & cut into slices. Prepare Mexican Corn Salad: -In a bowl, add cream, lemon juice, mix well & let it rest for 5 minutes. Sour cream is ready! -Add corn kernels, onion, green chilli, garlic, fajita seasoning (1 tsp), fresh coriander, pink salt & mix well. Prepare Stir Fried Vegetables: -In a wok,add cooking oil, onion, capsicum, yellew bell pepper, tomato, fajita seasoning, stir fry for a minute & set aside. Prepare Mexican Rice: -In the same wok, add cooking oil, garlic & fry until golden. -Add water, tomato paste, chicken powder, fajita seasoning (1 tbs), mix well & cook for a minute. -Add rice & give it a good mix. Assemble Fajita Platter & serve!
