I am one of those people who bakes year-round, regardless of how brutally it gets in the summer months. Perhaps the sunniest of flavors that I crave deeply when I’m dreaming of warmer weather is lemon. One of the more iconic flavor pairings is lemon and poppy seed. Bright and punchy from the lemon with bursts of texture from the seeds, the duo is wonderful in scones and muffins, but my favorite way to enjoy it is in cake. This lemon poppy seed cake is baked in a Bundt pan and finished with a simple, two-ingredient lemon glaze, making it more effortless than a layered cake, but just as impressive for your spring and summer gatherings.
