First, cut off the bottom of the cabbage and remove any outer leaves that are wilted or damaged. Cut the cabbage in half through the stem end. Cut each half in half again, so you have quarters. Remove the stem from each quarter by cutting it out with a sharp knife. Slice each quarter into thin shreds. You can do this by cutting the cabbage lengthwise into thin strips or by slicing it crosswise into thin shreds.
