Ingredients: 4 chicken breasts 1 cup sundried tomatoes, chopped 1 cup chicken broth 1 cup cream 2 cups fresh spinach 1 cup grated Parmesan 2 tbsp olive oil 2 garlic cloves, chopped Salt and pepper to taste Instructions: Heat the olive oil in a large skillet over medium-high heat. Season the chicken breasts with salt and pepper and add them to the pan. Fry 5-7 minutes on each side until cooked through. Remove the chicken from the pan and set aside. In the same pan, add the minced garlic and sauté until fragrant, 1-2 minutes. Add the sundried tomatoes, chicken broth and heavy cream to the pan and stir well. Bring the mixture to a boil, then reduce the heat to low and simmer for 5 minutes. Add the cooked chicken back to the pan and stir in the fresh spinach. Sprinkle the grated parmesan over the dish and cover the pan. Let the dish cook for another 5 minutes, or until the spinach has wilted and the cheese has melted. Serve the Tuscan Chicken hot, topped with additional Parmesan, if desired. Enjoy your meal!
