Suji Rolls with Garlic Stuffing Recipe Ingredients: For Suji Roll: - 1 Cup Semolina (Suji) - 2 Tbsp Wheat Flour - 1/2 Cup Curd (Yogurt) - 1 Cup + 1/4 Cup Water - 1 Tsp Salt - 1 Tsp Cumin Seeds - 1/2 Tsp Red Chilli Flakes - 1 Tbsp Chopped Green Coriander For Garlic Stuffing: - 1/4 Cup Peanuts - 1 Tbsp Oil - 8 Cloves Garlic (finely chopped) - 4 Pcs Dry Red Chilli - 1/4 Cup Dry Coconut (grated) - 2 Tsp White Sesame Seeds - 1 Tsp Salt (adjust to taste) Instructions: 1. Prepare the Suji Batter: - In a mixer jar, add semolina (suji), wheat flour, and churn for a minute to make a fine powder. - Add curd and water, and churn again until smooth. Transfer the mixture to a bowl. - Add 1/4 cup more water and mix well. Cover the bowl and let it rest for 5 minutes. 2. Make the Garlic Stuffing: - In a pan, add peanuts and roast them for 2-3 minutes. - Add oil, garlic cloves, and dry red chillies. Sauté until the garlic turns brown and releases its fragrance. - Add grated dry coconut, white sesame seeds, and salt. Mix well. - Grind the mixture into a coarse consistency powder. 3. Steam the Suji Rolls: - In a kadhai (or steamer), add water and place a stand inside. Cover and let the water heat up. - To the suji batter, add salt, cumin seeds, red chilli flakes, and chopped green coriander. Mix well. - Grease a plate with oil, then pour the suji batter onto the plate and spread a thin, even layer. - Place the plate in the kadhai for steaming. Steam for about 3 minutes. 4. Assemble the Suji Rolls: - After 3 minutes, remove the steamed layer from the plate. - Spread the garlic stuffing evenly over the steamed layer. - Cut the layer into small pieces and roll them into thin suji rolls. 5.
