*I Haven’t Cooked Cipra in So Long! Karo Village Chicken Curry*
I haven't cooked Cipra in such a long time! 😭 Today I'm making this special Karo traditional dish that I've been craving.
*Cipra* is a sour and spicy chicken stew from the Karo people in North Sumatra. The secret is the _cipra powder_ made from roasted ground corn that makes the broth thick and gives it that unique aroma.
In this video I’m using:
- Free-range chicken `ayam kampung`
- Homemade cipra powder
- Oyster mushrooms, chilies, lemongrass, galangal, turmeric, kaffir lime leaves
- Tamarind `asam cikala` and tomato for that signature sour taste
- Coconut milk for a creamy finish
No sautéing, no oil. We just boil all the spices directly with the chicken and finish with thick coconut milk + spring onions. The result? Thick, spicy, sour, and so comforting 🤤
