In this video, I’m cooking authentic *Rica-Rica Andaliman Ayam Merah* over a traditional wood fire. No coconut milk, just rich spices and bold heat that makes this dish taste absolutely amazing.
*What’s inside:*
- 1.7kg Red Free-Range Chicken, cut small
- Tons of spices: garlic, shallots, red chili, bird’s eye chili, andaliman pepper, ginger, lemongrass, turmeric, galangal
- Seasoned with lemongrass, kaffir lime leaves, galangal, salt, sugar, and mushroom broth
- Cooked 3 times with water until the chicken is super tender
The secret? Cook it low and slow on wood fire, and don’t be stingy with the spices. The andaliman gives it that unique fresh, numbing kick that pairs perfectly with the heat.
Best served with rice and fresh cucumber. One bite and you’ll understand why this is my favorite way to cook red chicken.
