Soft French Scramble: Whisked eggs cooked slowly over low heat with butter, stirred continuously for small, velvety curds.
Poached: Simmered gently in water without the shell to produce a firm white and liquid, golden yolk.
Shakshuka: Poached directly inside a simmering, spiced sauce of tomatoes, bell peppers, onions, and cumin.
Soy-Marinated (Ajitsuke Tamago): Soft-boiled for exactly 6 minutes, then steeped in soy sauce, mirin, and water for ramen or rice bowls.
Master Recipe: Classic Soft-Creamy Scrambled Eggs
Ingredients:
3 large eggs
1 tbsp unsalted butter
Pinch of salt and black pepper
1 tsp fresh chives (optional)
1.Whisk Thoroughly:Air creates fluffiness.
Break the eggs into a bowl. Whisk vigorously with a fork or whisk until the whites and yolks are fully blended into a uniform yellow mixture.
2.Melt Butter on Low Heat:Do not brown the butter.
Place a non-stick skillet over medium-low heat. Add the butter and let it melt until just foamy without letting it brown.
3.Cook Slowly with Gentle Sweeps:
Pour in the whisked eggs. Wait 10–15 seconds for the edges to set, then gently push the eggs across the pan with a silicone spatula to form soft curds.
4.Remove from Heat Early:Carryover heat keeps cooking them.
Turn off the heat when the eggs are still slightly runny and glossy. Season with salt, pepper, and fresh chives right before serving.
