Add the pasta and cook according to the package instructions until al dente (firm to the bite). Reserve 1/2 cup of the starchy pasta water, then drain the rest.2.Sauté garlic and spices:Keep heat low to prevent burning.Heat olive oil in a skillet over medium-low heat. Add minced garlic and red chili flakes. Cook for about 1 minute until fragrant and lightly golden, being careful not to let the garlic burn.3.Build the sauce:Simmer until thickened.Add the chopped tomatoes, tomato paste, dried oregano, salt, and black pepper. Stir well and simmer on medium heat for 5 to 7 minutes until the tomatoes break down into a rich sauce.4.Toss and emulsify:Use reserved pasta water for texture.Add the cooked pasta directly into the sauce. Pour in a splash of the reserved pasta water (about 2 to 3 tablespoons) and toss vigorously over low heat for 1 to 2 minutes so the sauce coats the noodles evenly.5.Garnish and serve:Serve immediately.Turn off the heat.
