250g Pasta (Penne, Fusilli, or Rigatoni)2 tbsp Extra virgin olive oil4-5 cloves Garlic, finely minced1 small Yellow onion, finely chopped4 large Fresh tomatoes (blanched & pureed) OR 1 can (400g) crushed tomatoes1 tsp Dried oregano1 tsp Red chili flakes1/2 tsp Black pepper, freshly ground1/2 tsp Sugar (to balance tomato acidity)Salt to tasteFresh basil leaves & grated Parmesan cheese for garnish1.Boil the pasta:Save 1/2 cup of pasta water before draining.Bring a large pot of heavily salted water to a boil. Add pasta and cook until al dente (usually 1-2 minutes less than package instructions). Reserve 1/2 cup of pasta water, then drain the rest.2.Sauté the aromatics:Heat olive oil in a wide skillet over medium heat. Add minced garlic and sauté for 30 seconds until fragrant (do not let it brown). Add chopped onions and cook for 3–4 minutes until soft and translucent.3.Simmer the tomato sauce:Pour in the tomato puree or crushed tomatoes. Stir in oregano, red chili flakes, black pepper, sugar, and salt. Reduce heat to low, cover, and let simmer for 10–12 minutes until the oil starts to separate on top.4.Toss pasta and emulsify:Add the cooked pasta directly into the sauce. Pour in 2–3 tablespoons of the reserved starchy pasta water to bind the sauce seamlessly to the noodles. Toss well over low heat for 1–2 minutes.5.Garnish and serve:Remove from heat.
