#AMAZING CHINESE CONGEE RECIPE!!!
Ingredients
1 cup jasmine rice (washed and drained)
8 to 9 cups water or low-sodium chicken stock (1:8 ratio for thick, 1:9 for standard)
1-inch piece fresh ginger, sliced into matchsticks
2 scallions (green onions), thinly sliced
1 tbsp soy sauce
1 tsp toasted sesame oil
1/2 tsp salt (adjust to taste)
Optional toppings: Century egg, shredded cooked chicken, crispy fried shallots, chili oil, or Chinese fried dough sticks (youtiao).
Method
1.Rinse and freeze the rice:Secret trick for faster cooking.
Rinse the jasmine rice thoroughly until the water runs clear. Freeze the wet rice in a sealed bag for at least 2 hours (or overnight). Freezing ruptures the rice grain walls, helping them break down in 30 minutes instead of an hour.
2.Bring to a boil:
In a large stockpot or Dutch oven, combine the rice, stock (or water), and half of the ginger matchsticks. Bring to a rolling boil over high heat.
3.Simmer and stir:
Reduce the heat to low, cover partially with a lid, and simmer for 30–40 minutes. Stir occasionally—especially towards the end—to prevent the rice from sticking to the bottom and to help break down the grains into a creamy texture.
4.Season and serve:
Stir in the salt, soy sauce, and sesame oil. Ladle into individual bowls and garnish with the remaining fresh ginger, sliced scallions, and your choice of extra toppings.
Pro-Tips
Freezing the rice: Skipping the freezer step is fine, but you will need to simmer the porridge for about 60–75 minutes to achieve the same creamy consistency.
Liquid ratio: Use an 1:8 ratio for a thicker porridge or 1:10 for a thinner, lighter version.
