Source: Salu Salo Recipes Ingredients Beef & Marinade Beef: 1 lb (450g) flank steak, sirloin, or tenderloin, thinly sliced against the grain Soy Sauce: 1 tbsp Cornstarch: 1 tsp Sesame Oil: 1 tsp Stir-Fry & Vegetables Mushrooms: 8 oz (225g) cremini or button mushrooms, sliced Aromatics: 3 cloves garlic (minced), 1 tsp fresh ginger (minced) Green Onions: 2 stalks, chopped into 1-inch pieces Cooking Oil: 2 tbsp neutral oil (vegetable or canola) Savoury Sauce Oyster Sauce: 2 tbsp Soy Sauce: 1 tbsp Dark Soy Sauce: 1 tsp (for rich color, optional) Beef Broth or Water: 1/4 cup Cornstarch: 1 tsp (slurried into the liquid) Instructions 1 Marinate the beef Prevents tough, dry meat during high-heat cooking Slice the beef thinly against the grain. Combine with 1 tbsp soy sauce, 1 tsp cornstarch, and 1 tsp sesame oil. Mix well and let sit for 10–15 minutes while preparing the rest of the ingredients. 2 Mix the stir-fry sauce In a small bowl, whisk together the oyster sauce, 1 tbsp soy sauce, dark soy sauce, beef broth (or water), and 1 tsp cornstarch until smooth. Set aside near your stove. 3 Sear the beef Heat 1 tbsp oil in a large wok or skillet over high heat until shimmering. Add the marinated beef in a single layer and sear without moving for 1 minute to get a deep brown crust. Stir-fry for another 1–2 minutes until cooked through. Transfer beef to a plate. 4 Brown the mushrooms and aromatics Add the remaining 1 tbsp oil to the same pan over medium-high heat. Add sliced mushrooms and cook for 3–4 minutes until they release their liquid and turn golden-brown. Stir in the garlic and ginger, cooking for 30 seconds until fragrant. 5 Combine and thicken sauce Return the beef and any accumulated juices back into the pan. Give the sauce mixture a quick stir, then pour it over the beef and mushrooms. Toss continuously for 1–2 minutes until the sauce bubbles and thickens into a glossy glaze. 6 Finish and serve Stir in the green onions, turn off the heat, and serve immediately over steamed jasmine rice or noodles. Pro Tips for Best Results Slice Thinly: Partially freeze the beef for 15–20 minutes prior to prep—it makes slicing paper-thin strips much easier.
