Bhindi, also known as okra or ladyfingers, is a popular vegetable in Indian cuisine. To prepare a simple bhindi recipe, you will need:
1 lb fresh bhindi (okra), washed and dried
2 tbsp oil
1 tsp cumin seeds
1 tsp coriander powder
1/2 tsp turmeric powder
1/2 tsp red chili powder
Salt, to taste
Instructions:
Cut the ends off the okra and slice them into 1/2-inch pieces.
Heat oil in a pan over medium heat. Add cumin seeds and let them sizzle.
Add the sliced okra and stir to coat with oil. Cook for 5-7 minutes, or until the okra is slightly softened.
Add coriander powder, turmeric powder, red chili powder, and salt. Stir to combine.
Reduce heat to low and cover the pan. Cook for an additional 10-15 minutes, or until the okra is tender and lightly browned.
Serve hot as a side dish with rice or roti.
