Cozy Anime Cooking: Indonesian Capcai Soup with Chicken, Shrimp & Fresh Vegetables
Welcome to Aiko's cozy anime kitchen!
Today, Aiko is preparing Capcai Kuah, a comforting Indonesian-style mixed vegetable soup inspired by Chinese-Indonesian home cooking. This savory dish combines tender chicken, juicy shrimp, colorful vegetables, and a flavorful broth.
The secret to delicious capcai is adding vegetables in the right order, cooking the proteins carefully, and thickening the broth just enough to create a light, glossy finish.
Ingredients (1 Serving)
Main Ingredients
- 60 g chicken, cut into bite-sized pieces
- 40 g peeled and deveined shrimp
- 30 g carrot, thinly sliced
- 30 g baby corn
- 40 g cauliflower florets
- 60 g Chinese cabbage, separating the white stems from the green leaves
- 2 garlic cloves, minced
- A little sliced onion
- A little chopped scallion
- 1 tbsp cooking oil
Broth and Seasonings
- 175 ml chicken stock
- 1 tsp oyster sauce
- A little soy sauce
- A few drops of fish sauce
- A pinch of sugar
- A little ground pepper
- 1/2 tbsp cornstarch
- 1 tbsp cold water for the cornstarch slurry
- 1 tsp sesame oil
These measurements are practical starting points for one serving. Adjust the seasonings to your taste, especially because oyster sauce, soy sauce, and fish sauce already contain salt.
Cooking Instructions
1. Sauté the Aromatics
Heat the cooking oil in a wok over medium heat. Add the minced garlic and sliced onion. Stir until fragrant and softened, taking care not to burn the garlic.
2. Cook the Chicken and Shrimp
Add the chicken and stir-fry until cooked through. Add the shrimp and cook until pink and opaque. Transfer both to a clean plate and set aside to prevent overcooking.
3. Stir-Fry the Firmer Vegetables
Add the carrot and baby corn to the same wok. Stir-fry for about two minutes.
4. Add the Other Vegetables
Add the cauliflower and the thick white stems of the Chinese cabbage. Stir-fry for about one minute, allowing them to soften slightly while retaining their shape.
5. Add the Broth and Seasonings
Pour in the warm chicken stock. Add the oyster sauce, soy sauce, fish sauce, sugar, and ground pepper. Stir well and bring the broth to a gentle boil. Taste and adjust the seasoning if needed.
6. Thicken the Broth
Mix the cornstarch with cold water until smooth. Pour it gradually into the simmering broth while stirring continuously. Cook for about one minute, until the broth becomes lightly thickened and glossy.
7. Return the Protein and Add the Leaves
Return the cooked chicken and shrimp to the wok and heat until hot throughout. Add the green Chinese cabbage leaves last and cook for approximately 30–60 seconds, just until they begin to wilt.
8. Finish and Serve
Turn off the heat. Add the sesame oil and stir gently once. Sprinkle with chopped scallions and serve the capcai hot.
Cooking Tips
- Add firmer vegetables first and leafy greens last to help preserve their texture.
- Make sure the chicken is fully cooked and the shrimp are opaque throughout.
- Always mix cornstarch with cold water before adding it to hot broth.
- If the broth is too thick, add a little hot chicken stock. If it is too thin, add more slurry gradually.
- Add sesame oil after turning off the heat to preserve its aroma.
- Cooking times vary depending on ingredient size, cookware, and heat level.
