Looking for an easy and delicious homemade meal? Try this Indonesian-style Sausage and Egg Stir-Fry!
This simple recipe combines juicy sausages, tender eggs, garlic, shallots, sweet soy sauce, and oyster sauce to create a delicious sweet and savory dish with a little spicy kick.
It takes approximately 15–20 minutes to prepare and cook, making it a great choice for a quick lunch or dinner. Serve it warm with steamed white rice for a satisfying homemade meal.
INGREDIENTS
Serves 2–3 people
- 3 chicken or beef sausages, sliced diagonally
- 3 eggs, beaten
- 2 cloves garlic, finely chopped
- 2 shallots, thinly sliced
- 2 red bird's-eye chilies, sliced (optional)
- 1 spring onion, cut into 2 cm pieces
- 1 tablespoon sweet soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon light soy sauce
- 1/2 teaspoon Masako chicken seasoning
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon sugar
- 2–3 tablespoons water
- Cooking oil as needed
SEASONING SUBSTITUTE
If Masako chicken seasoning is unavailable in your country, you can substitute it with another brand of chicken bouillon powder or chicken stock seasoning.
Start with approximately 1/2 teaspoon and adjust according to taste. Sausages and oyster sauce already contain salt, so avoid adding too much seasoning.
Do not use a full portion of both Masako and another chicken bouillon powder at the same time.
HOW TO MAKE IT
1. Fry the sliced sausages in a little oil until lightly golden and slightly opened. Remove and set aside.
2. In the same pan, sauté the chopped garlic, sliced shallots, and optional chilies until fragrant.
3. Return the sausages to the pan and stir everything together.
4. Add sweet soy sauce, oyster sauce, light soy sauce, sugar, black pepper, and chicken seasoning. Pour in 2–3 tablespoons of water and stir until the sauce slightly thickens.
5. Pour the beaten eggs evenly over the sausages. Let the eggs set for a few seconds.
6. Gently stir and scramble the eggs with the sausages.
7. Cook over low heat until the eggs are fully cooked but still tender.
8. Add the spring onion, stir briefly, and turn off the heat.
9. Serve hot with steamed white rice.
COOKING TIPS
- Use low heat to keep the eggs tender and prevent them from becoming dry.
- Adjust the seasoning gradually because sausages and oyster sauce are already salty.
- Add more chilies if you prefer a spicier dish.
- For extra aroma, add a small amount of sesame oil just before serving.
