Oreo Chocolate Cookie Brookies
These Brookies have my whole heart! I have been having a rough couple of days and the thought of these brownie-cookies make me so happy, I had to share them again! EGGLESS RECIPE PINNED IN COMMENTS.
Recipe (with egg - one shown in video)
85 g dark chocolate (use real dark chocolate at least 60% dark) - approx ½ cup
55 g unsalted butter - ½ cup
85 g icing sugar (not powdered sugar) 1/3 cup plus 2 tbsp
1 egg (medium)
75 g all purpose flour ½ cup plus 1 tbsp
7 g or 1 heaping tablespoon of cocoa powder
1/8 tsp baking powder (a pinch)
pinch of salt if using unsalted butter
Oreos & Hazelnuts- chopped (approx 1/4 cup each)
Melt the chocolate & butter - set it aside to cool
Whisk the egg, vanilla & sugar in a separate bowl (you don’t need to aerate the mixture just whisk till the sugar dissolves completely) - this is important, don’t skip.
Pour the melted chocolate mixture into the egg mixture.
Gently combine.
Sift the flour, cocoa, baking powder & salt (if using). Fold it in, add the mix-ins and fold till combined.
(Note, if your cookie dough/better seems too liquidy it’s probably because the chocolate mixture was too hot) You can adjust the consistency a bit by adding 1 tablespoon or 2 of flour.)
Scoop on to a parchment lined baking tray and bake in a preheated oven at 175 C 12-14 mins.
You can place more oreos and hazelnuts on top of the freshly baked cookies while warm.
Let them cool on the pan as they firm up once cooled.
