Crispy and Delicious Vegetable Pakoray - A Perfect Snack or Appetizer
This recipe is for a classic and popular Pakistani/Indian dish called Vegetable Pakoray. Pakoray are deep-fried fritters made with a variety of vegetables such as onion, potatoes, spinach, and eggplant. They are crispy on the outside and soft on the inside, making them the perfect snack or appetizer. They can be served with chutney or ketchup as a dip.
Ingredients:
1 cup gram flour (besan)
1/2 cup finely chopped mixed vegetables (onion, potatoes, spinach, eggplant)
1/4 cup finely chopped cilantro
1/2 teaspoon salt
1/2 teaspoon red chili powder
1/2 teaspoon cumin powder
1/4 teaspoon baking powder
Water as needed
Oil for deep-frying
Directions:
In a large mixing bowl, combine the gram flour, mixed vegetables, cilantro, salt, red chili powder, cumin powder, and baking powder.
Slowly add water as needed, to make a thick batter.
Heat oil in a deep pan or kadhai over medium-high heat.
Using a spoon, drop small portions of the batter into the hot oil.
Fry the pakoray in batches until they turn golden brown and crispy.
Using a slotted spoon, remove the pakoray from the oil and place them on a paper towel-lined plate to drain excess oil.
Serve the pakoray hot with chutney or ketchup. Enjoy!
