Ingredients: 4 goat trotters 2 tablespoons of olive oil 2 onions, chopped 4 cloves of garlic, minced 1 teaspoon of dried thyme 1 teaspoon of dried rosemary 1 teaspoon of dried oregano 1 cup of red wine 4 cups of chicken broth 2 tablespoons of tomato paste Salt and pepper, to taste Fresh parsley, for garnish Instructions: Rinse the goat trotters and pat them dry with paper towels. In a large pot, heat the olive oil over medium heat. Add the chopped onions and minced garlic, cook until softened, about 5 minutes. Add the dried thyme, rosemary, and oregano to the pot, cook for another minute. Increase the heat to high, add the goat trotters to the pot and brown them on all sides. Pour in the red wine, let it reduce for about 5 minutes. Add the chicken broth and tomato paste to the pot, bring to a boil. Reduce the heat to low, cover the pot and simmer for 2-3 hours or until the goat trotters are tender. Season with salt and pepper, to taste.
