QUINOA w/ rosted VEGGIES
????Recipe:
▫️1 cup quinoa
▫️1 big sweet potato
▫️3-4 carrots
▫️1 red and 1 yellow pepper
▫️1 red onion
▫️2 handfulls of baby spinach (chopped)
▫️chicken filet
????Dressing:
▫️3 tbsp olive oil
▫️2 tbsp balsamic vinegar
▫️2 tbsp maple syrup
▫️1 tsp dijon mustard
▫️salt, pepper
Wash, peal and cut veggies into smaller pieces. Season with olive oil, salt, pepper and touch of agave syrup (optional). Roast in the oven until done. For about 25min on 210-220C.
While veggies are roasting, cook quinoa per instruction, seasoned with only salt. Then mix all together with the dressing and roasted veggies. Serve with some grilled chicken filet or tofu and enjoy!
