Potato Donut recipe
Ingredients
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 2 tablespoons butter, melted
- 1/2 cup mashed potatoes
- 1/3 cup honey
- 1/3 cup buttermilk
- Vegetable oil, for frying
- Cinnamon and sugar, for topping
Instructions
1. In a large bowl, whisk together the flour, baking powder, salt, baking soda, and cinnamon.
2. In a separate bowl, mix together the melted butter, mashed potatoes, honey, and buttermilk until smooth.
3. Add the wet ingredients to the dry ingredients and stir until just combined.
4. Heat about 2 inches of vegetable oil in a heavy-bottomed pot or Dutch oven to 375°F.
5. Carefully drop spoonfuls of the batter into the hot oil and fry until golden brown, about 2 minutes per side.
6. Transfer the donuts to a paper towel-lined plate and let cool.
7. Sprinkle with cinnamon and sugar, if desired. Serve warm. Enjoy!
