Mix all the ingredients for the vinaigrette
????Great recipe for meal prep since this salad gets even tastier as it sits in a fridge.
????Recipe:
▫️1 cup chickpeas
▫️2 tomatoes
▫️2 small cucumbers
▫️1 red, 1 yellow bell pepper
▫️1/2 purple onion
▫️80-100g feta cheese
????Herb vinaigrette:
▫️3-4 tbsp olive oil
▫️juice from 1 lemon
▫️1 tsp salt
▫️1/2 tsp dried basil
▫️1/2 tsp dried oregano
▫️1/2 tsp chilly flakes (optional)
▫️black pepper
????Rinse the chickpeas if using canned ones and cut all the veggies and feta cheese into small cubes. Add all to a bowl.
????Mix all the ingredients for the vinaigrette in a small bowl and pour on top of the precut veggies. Then again mix all together until well coated. If needed, adjust the taste by adding more salt, lemon juice..
????ps If you need extra protein, just add chicken, tofu or hard boiled eggs, which are great choice if you’re making this as a part of your meal prep. Store in an airtight container in fridge. Enjoy!
