????[sub for tofu] Preheat oven to 220C. Season chicken with salt, pepper, olive oil and lemon juice and cook for approx 15min (depends on the size of chicken breasts). Once it’s cooled off, shred it using two forks. ????veggies: 2 carrots shredded, 1 red bell pepper julienned, purple cabbage julienned, lettuce chopped, 1/2 cup cooked quinoa.
