Making pancakes is a great way to start your day: it's easy, delicious and totally customizable. To get started you'll need 1 cup of all-purpose flour, 2 tsp of baking powder, 1 tsp of sugar, ½ tsp of salt, 1 cup of milk (2% or higher), 2 Tbsp vegetable oil and 1 egg. Sift together the flour, baking powder, sugar and salt in a medium bowl. In a separate bowl mix the milk, oil and egg until evenly combined. Add wet ingredients to the dry ingredients until just combined; do not overmix as this will make for tough pancakes! Heat your griddle or frying pan over medium heat then grease with butter. Using either a ladle or measuring up scoop ¼ cup portions onto the hot griddle allowing space between each pancake as they will spread out while cooking. Flip pancakes when second side is golden brown and edges look slightly dry. Serve warm with syrup and butter if desired - enjoy!
