Chicken Bhuna Masala Dhaba Style #chicken #chickenrecipes Chicken Bhuna Masala (Dhaba Style) The marinated Chicken is cooked at high heat in onion - ginger garlic paste mixture. Later the chicken is simmered in the tomato masala mixture until the chicken becomes tender, masala beautifully coats the chicken pieces and semi dry consistency of gravy is achieved. INGREDIENTS : Chicken pieces with bones 700 g Marination : Salt 1 tsp or to taste Red Chilli Powder 1 /2 tsp Ginger Garlic Paste 1 tsp Less Spicy Green Chillies, crushed 2 Marination Time : 30 minutes Dry Roast Ingredients : Coriander Seeds 1 tbsp Black Cardamom 1 Cloves 2 Cinnamon Stick 1 " Mace few strands Black Peppercorns 1/2 tsp Green Cardamoms 3 Bay Leaf 1 Dry Roast these whole spices and Grind. Keep it aside. Add it while preparing bhuna masala along with other powdered spices. Ingredients to make Bhuna Masala : Cooking Oil Onions, finely chopped 350 g Ginger Garlic Paste 1 tbsp Tomatoes 2 big (pulse in a food processor until crushed) Turmeric Powder 1/2 tsp Kashmiri Red Chilli Powder 1 tbsp Coriander Powder 1 tsp, heaped Ground dry roast masala Curd 1/2 Cup Water 1/2 Cup or as required Fresh Coriander Leaves, chopped Method : 1 Heat oil and Saute onions till light golden brown. Stir often. 2 Add Ginger Garlic Paste and Saute for 2 min (or until the raw smell of GG Paste disappears) at low flame. 3 Medium - High Heat, add marinated chicken. 4 Cook marinated chicken uncovered for 5 min. 5 Time to Bhuno or Simmer chicken in tomato onion masala mixture. Lower the flame and add crushed tomatoes, powdered spices and ground dry roast masala. Mix well. Stir and cook (15-20 min) until tomatoes turn soft and raw smell of masala goes away. Onion, tomato masala mixture starts coating the chicken pieces. 6 Add Curd. Mix well. Cook for 5-7min or until the chicken is tender. 7 Add water. Mix well. Cook until the desired consistency of bhuna chicken masala is achieved. I prefer semi dry bhuna chicken. What about You?? 8 Garnish with fresh coriander leaves.
