Masala Dosa is a popular South Indian dish made with fermented rice and lentil batter filled with a spicy potato filling. Here's how you can make Masala Dosa at home: Ingredients: For the dosa batter: 1 cup raw rice 1/2 cup urad dal 1/4 tsp fenugreek seeds Water as needed Salt to taste For the potato filling: 4 medium-sized potatoes, boiled and mashed 1 onion, chopped 1 green chili, chopped 1/2 tsp mustard seeds 1/2 tsp cumin seeds 1/2 tsp turmeric powder 1/2 tsp red chili powder Salt to taste Oil for cooking For serving: Sambar Coconut chutney Instructions: Wash the rice and urad dal separately and soak them in water for at least 6 hours or overnight along with fenugreek seeds. Drain the water and grind the rice and urad dal separately to a smooth batter using water as needed. Mix the two batters together in a large bowl and add salt to taste. Cover and let the batter ferment overnight or for at least 8 hours. For the potato filling, heat oil in a pan and add mustard seeds and cumin seeds. Once they start to splutter, add chopped onion and green chili and sauté till the onion turns translucent. Add turmeric powder, red chili powder, and salt to taste. Mix well and add the mashed potatoes. Mix until everything is well combined and cook for a couple of minutes. Heat a dosa tawa or a flat pan over medium heat. Pour a ladleful of dosa batter in the center of the tawa and spread it evenly in a circular motion using the back of the ladle. Drizzle some oil on the edges of the dosa and let it cook for 2-3 minutes or until the edges turn golden brown. Place a spoonful of the potato filling on one side of the dosa and fold it over to cover the filling. Serve with sambar and coconut chutney. Enjoy your homemade Masala Dosa!
