Bihari Kabab is a popular dish from the Indian state of Bihar, known for its spicy and flavorful taste. Here's a simple recipe to make Bihari Kabab at home:
Ingredients:
1 lb. boneless beef or lamb, cut into small pieces
1/2 cup raw papaya paste
2 tbsp. ginger paste
2 tbsp. garlic paste
1 tbsp. red chili powder
1 tsp. turmeric powder
1 tsp. cumin powder
1 tsp. coriander powder
1 tsp. garam masala powder
2 tbsp. mustard oil
Salt, to taste
Wooden skewers, soaked in water for 1 hour
Instructions:
In a large bowl, mix together the papaya paste, ginger paste, garlic paste, red chili powder, turmeric powder, cumin powder, coriander powder, garam masala powder, mustard oil, and salt to form a marinade.
Add the meat to the marinade and mix well to coat all the pieces evenly. Cover the bowl and let the meat marinate in the refrigerator for at least 4 hours, or preferably overnight.
Preheat your grill to medium-high heat.
Thread the meat onto the soaked wooden skewers, leaving a little space between each piece.
Grill the skewers for 8-10 minutes on each side, or until the meat is cooked through and slightly charred.
Serve with sliced onions, lemon wedges, and mint chutney.
