Croque Monsieur Lunch Recipe

Ingredients:
8 slices of white bread
4 tablespoons of unsalted butter
4 tablespoons of all-purpose flour
2 cups of milk
Salt and pepper to taste
1/4 teaspoon of nutmeg
8 ounces of ham, sliced
8 ounces of Gruyere cheese, grated
Dijon mustard
Instructions:
Preheat your oven to 400°F.
In a saucepan, melt 2 tablespoons of butter over medium heat. Add 4 tablespoons of flour and whisk until smooth. Cook for 2-3 minutes, stirring constantly.
Slowly add 2 cups of milk to the pan, whisking constantly to prevent lumps. Cook for about 5-7 minutes or until the mixture thickens.
Add salt, pepper, and nutmeg to taste. Remove from heat and set aside.
Lightly toast the bread slices in the oven for 3-4 minutes.
Spread Dijon mustard on one side of each slice of bread. Layer ham and Gruyere cheese on top of half of the bread slices.
Spread the béchamel sauce over the ham and cheese. Top with the remaining slices of bread.
Melt the remaining 2 tablespoons of butter in a skillet over medium heat. Place the sandwiches in the skillet and cook until golden brown on both sides.
Transfer the sandwiches to a baking sheet and bake for 5-7 minutes or until the cheese is melted and bubbly.
